How do you tell if your hops are no longer good?

When you sniff'em, and they smell cheesy instead of like hops.

Hops will lose their AA over time, but generally speaking, if they don't smell good, they're not "good" (unless you're staling them on purpose for a style).
Try to store them as cold as possible with as good a barrier to air as you can.

I buy hops by the pound and store them in Mason jars in the freezer. They don't seem to be less effective even after several years. But as chumley-dude sez: "Sniff 'em." If they smell like hops, use 'em. Otherwise, loose 'em.
