Heres the Imperial stout i brewed last sunday. Imperial Stout O.G.: 1.091-1.092 F.G.: 1.022-1.023 SRM: 100+ IBU: 78 ABV: 8.8% Boil is for 90 min. Volume is 5 gallons. 15 lbs. US 2-row Pale Malt 12 oz. US Chocolate Malt 10 oz. Roasted Barley 8 oz. British Black Malt 18 oz. US 80L Crystal Malt 8 oz. Victory Malt 16.8 HBU's Clusters Hops (Bittering) at 90 min. (approx. 2.75 @ 7.3%AA) 1/2 oz. Centennial Hops (flavor) at 15 min. 1/2 oz. Northern Brewer (flavor) at 15 min. 1 tsp. Irish Moss at 15 min. 1 oz. Liberty (aroma) at 2 min. Yeast is Wyeast 1056 American Ale (1st. choice) 1028 London ale (2nd. choice) Dry hop with 1/2 oz. Liberty I used the london ale yeast and it took off quite well. Seems a bit sluggish now, Ill have a current hydro reading tommorow. Anyways being my first Impy, how long should one store this for? I was hopeing to bottle them and christmas gift them, but Im feeling this isnt going to be possible. btw i doubled the batch. Im a bit impatient sometimes with beers such as this, and was curious when would be a good time to keg and drink. Is six months appropriate? Id prefer six weeks. Heath |

I'd say 6 months at least. The last RIS I did took 2 years to really get good. LIfe begins at 60...1.060, that is.
