I'm having trouble with my temp controller at the moment and can't get below 57F. So I'm wondering what some of you folks who may have actually used S189 think about me fermenting at that temp. The 'official' temp range is 49F - 59F with the ideal temp at 54F.

I want to make a Vienna and a CAP. Can I get away with it?

Definitely. This is one of the few lager yeasts you can ferment at ale temps and get decent results. 57F will be just fine. A guy in our club regularly uses this as a "super clean" ale yeast and ferments at 65F. And wins medals.
