I recently read about single step infusion mashes with times as short as 10–15 minutes at 150–155 degrees F. I also remember reading in the past that even though an iodine test might indicate conversion was completed relatively quickly, it was still beneficial for the step to continue for at least 60 minutes, total. What is the minimum amount of time that one should consider for a single step mash, and is there any benefit to conducting longer mashes? |
