Does anyone know what values I should enter for Molasses? I am ball-parking it at 1.047 SG pppg and 300 SRM. 10% moisture content
anyone know for sure? Also, do you have the values for Honey?

The reference value for the extract potential of sucrose is 1.04621. If molasses is 10 percent water it couldn't be any higher than 1.0416. Myself I would probably use 1.040; molasses includes a number of unfermentable compounds. I don't know about color, but 300 SRM seems high to me.
As for clover honey, I use 1.038 for the extract potential (some people use 1.037) and 1 as the SRM value. My numbers are based on my experience from meadmaking.
