I'd love to see a recipe for New Glarus Wisconsin Belgian Red; it's absolutely exquisite, one of world's great beers in my opinion. I do know it uses a huge amount of sour red cherries, something like more than a pound in each 750 ml bottle. I don't think it would be cost effective to brew it without a source of cherries in season.
