Is the weihenstephan the only strain used to make weissbiers in the "mutter land", i.e., Germany? I see that Wyeast has a few different wheat beer yeast strains. |

Come on Jim, the other strains come from breweries that use them, just like any other kind of beer |

by the way Germany is known as "the Father-Land" Weihenstephaner is my fav. Hefe., (the worlds oldest brewery) and a good yeast choice for making most German Style Wheat-beers |

No, it's not the only strain. There are probably as many wheat beer strains in Germany as there are ale strains in the UK. |

My all-time favorite German Weissbier yeast strain was BrewTek's CL-930, German Weiss. It had a spicy, clovey flavor with little banana flavor, however this yeast gave my brews more body and the spicy flavors seemed to intensify as you drank the beer, which is not the case with #3068 Weihenstephan. After a trip a few years ago to Germany, I had some fresh Weissbier at home I made with CL-930, and it was a dead-ringer to the Weissbiers I had in Stuttgart, Germany. You can get CL-930 from brewingscience.com, which I am about to order, since Brewer's Resource is no longer in business. Has anyone tried Wyeast #3638?? I brewed a batch with it, but had explosive ferment and it was infected (rats!). |

3638 is a nice strain and has since replaced my favorite the 3068. 3638 Bavarian Wheat yeast Top cropping hefeweisen yeast with complex flavor and aroma. Balance of banana and bubble gum esters with lichi and apple/plum esters and clove. Flocculation low; apparent attenuation 70-76%. (64-75º F) Now it would be amazing if all those flavors come through. I found however fermenting around 68F that a good balance of clove, bannana, and vinilla stand out in front. Followed by a light malty sweetness and then the secondary flavors. Mostly apple then bubblegum, then the almost unnoticeable plum, lichi (which is a bitter sweet chinese fruit?) Very complex strain which reminds me of Erdinger weiss bier....... I have to say this is my new favorite wheat beer yeast an I will be using it for a while untill something better comes along. |

Shane, I too really liked the BrewTek CL-930 strain, but I'm now using White Labs #WLP380-Hefeweizen IV with great success. I'm not sure if it's the same strain or not, but I'm getting a great clovey spiciness from it along with some pleasant citrusy notes. PROST! Beertracker |
