I have decided to brew some wit biers with raw rolled wheat purchased from local co-op. I'd like to use a fairly high percentage of wheat to make a nice white beer. However, I am worried about stuck mashes. Can anyone help with information about how this might be done?

WB,

A couple of things to facility sparging with high percentage raw wheat mashes:

1. Pregelatinize the wheat. Just heat it up to about 170 in about 1qt/lb water and let it cool a bit.

2. After dough-in, do a protein rest at 122 for 20-25 min. Add a pound or so rice hulls to the mash.

3. Sacch at 149-151 until conversion.

4. Mash-out at 167 helps too.

You shouldn't have any problems with the sparge. It may be a bit slower than with all malt mashes, but you will be fine. I make witbiers with 50% raw wheat, 45% pilsner malt and 5% rolled oats. I mash in a Gott cooler with Phil's accroutrements and have never experienced a stuck mash with this procedure, even without rice hulls.

I second the recommendation to add rice hulls to the grist. They will help greatly to prevent a stuck sparge.
