I'm planning on brewing up a Saison in the next few batches and I just happen to have a bottle of Saison Dupont in the fridge. Has anyone succesfully brewed with the yeast cultured from SD? All I can find on the internet are mixed reviews and the theory that it's 3 yeasts combined, but I'm hoping to get a more reliable source here. Thanks. |

I did this last spring and it was a complete success. I got a great yeast character that was very much like the original. It may take some patience though; I had the bottle dregs in wort for about a week and was about ready to give up before it showed activity. But once it did it was a simple matter to step it up to pitching volume. I saved some from the fermenter and plan to reuse it soon. It was that good. I'd say go for it! |

Thanks John. Did you have to use fairly high temperatures to get activity? |

I just set it out at room temp which was probably low to mid-70s (F) at the time. |
