I'm planning on brewing up a Saison in the next few batches and I just happen to have a bottle of Saison Dupont in the fridge. Has anyone succesfully brewed with the yeast cultured from SD? All I can find on the internet are mixed reviews and the theory that it's 3 yeasts combined, but I'm hoping to get a more reliable source here. Thanks.

I did this last spring and it was a complete success. I got a great yeast character that was very much like the original. It may take some patience though; I had the bottle dregs in wort for about a week and was about ready to give up before it showed activity. But once it did it was a simple matter to step it up to pitching volume. I saved some from the fermenter and plan to reuse it soon. It was that good. I'd say go for it!

Thanks John. Did you have to use fairly high temperatures to get activity?

I just set it out at room temp which was probably low to mid-70s (F) at the time.
