Here is my recipe for my Smoked Porter Raosted Garlic Mashed Potatoes. 1 bottle smoked porter (homebrewed is best!) 3-5 heads oven roasted garlic 10 lbs potatoes Parmesian Cheese (to taste) butter (or margerine....at least 3/4 stick) Roast garlic in oven. Snip the top off the heads and drizzle with a little olive oil. Seal in aluminum foil and bake at 350 until well cooked. Boil potatoes. Mix potatoes in a mixer with all of the ingredients until creamy. Plenty of cheese really makes this recipe shine. Easy, tasty, went faster than the pig at Crispy Frey's Big Brew! My smoked porter is SUPER smoky from too much peated malt (many do not like peat) but it goes well with this recipe. Try to stay away from any smoked beer with generous hopping as the hops seem to leave a lingering citrus taste that is unpleasant with the garlic. Cheers! Jim |
