First, I'm taking the whole week off. Second, I'm making three different batches. Third, My friend Jim is coming up and bringing 24 oz. bone-in rib eye steaks. #1) I have 2 horribly swollen smack packs of Eau De Vie. I'm making twin starters for my semi-annual ABC coming up on Thursday. I hope that by pitching a gargantuan starter I can reduce some of the sweetness of my last batch. #2) Cellar Classic Syrah wine kit. #3) 11 gallons of an American IPA. Nice! That sounds like a fantastic week. Neighbor and I brewed 24 gallons of IPA yesterday and that may be it for me until vacation in December. |

I have my WHOLE Family coming to Texas this year.My 2 boys arrive tomorrow,Large brisket on the barbie tomorrow morning...My Niece and Nephew and kids coming Wednesday.Stepson and Family on Wed. too.I have the rest of the week off,after Tuesday. I am brewing 30 gallons of IPA and 30 gallons of Rye IPA on Saturday. All my kids will be home. Chili in the crockpot and pheasant poppers on the grill - it will be a good day. |

Temps expected to dip enough here in St. Louis to make my garage a pretty good primary fermenation zone for a pilsener. Vacation time makes it easier to justify a decoction mash, not just the procedure but the extra hour of studying it requires to remind myself of the procedures as I single step it the rest of the year these days. Sort of like playing chess or making a souffle once a year. Mike St. Louis |

The week has already started out good....I have a new dog! The wife and I adopted a 7 year old border collie that, get this....was originally a gift to someone from the Queen of England....Pip! Pip! The dog has gone from living on one of the fanciest ranches in Montana.....to living in town, with a ghetto brewer like me. How the mighty have fallen. |

My week doesn't look so good. I'll be working 10 - 12 hours per day today, tomorrow, and Friday plus, probably, a few more hours on Sunday. And I'll spend 8 - 9 hours on Saturday driving. I need a vacation. And a beer. |

Tomorrow we get a Bobcat delivered to the camp for 43 hours to regrade the driveway so the camper can get 2.5 feet higher above the river. I just stocked the van with the necessary beer. "Beer and Bobcats!" The yard will heal eventually. |

I was hoping to do 2 different bocks this weekend and fill up the temp controlled fridge but looks like that will wait till Xmas week now. Hey Hack, Keep that ABC cool so it doesn't jump up with the fermentation temps. That was the only theory on why the one we tasted was still a little hot tasting after 2 years. But the other flavors had aged in nicely. |
