I was fortunate to receive a fairly substantial quantity of apples this weekend....picked by an acquaintence the previous week before the record freeze hit. So I got the cider press out, and set out to make my well-received sweet cider recipe. Its pretty simple....4.5 gallons of apple juice, a gallon of honey, 1.5 oz. grated ginger, juice of one lemon....ends up at an OG of 1.140, usually finishes around 1.025. My problem was, somehow I ended up with 7 gallons of must instead of 5. (I can't figure out how this happened, especially since I wasn't drinking). So, my OG ended up way lower than I'd like....1.100. I ended up placing 6 gallons into a fermentor, and another gallon into a one gallon jug. My question is: How much honey should I add to 6 gallons of 1.100 cyser to raise the OG to 1.140? |

6 * 40 / 35 = 6.8 pounds Use seven - a bit more than a half gallon. |

My brewing spreadsheet calculates a honey addition of a little less than 7.4 lbs. by weight or 77 oz. by volume. I use 1.038 as the extract potential of honey. (Message edited by BillPierce on October 19, 2009) |

Shouldn't the calculation take into account the fact that the volume will rise by a bit more than a half gallon? (Message edited by BigR on October 19, 2009) |
