Brewed an Imperial Stout with an OG of 95. I was thinking of skipping the secondary and taking advantage of any suspended yeast to help with carbonation in the bottle. What do you think? |

I think big beers benefit from secondary conditioning. I leave my RIS in secondary for 30 days. I also pitch additional yeast at bottling. |

I agree with Bill. Some rehydrated US-05 at bottling works well if you want the quick and easy method. |

What about a 1.083 beer? Would you let it go 30 days in secondary and pitch additional yeast, too? Does the added yeast affect the taste at all? |
