A while back I came across this when I was still doing extract recipes (never had a chance to make it though): SSOS (extract) 7lbs Muntons light DME 1/2lb Muntons wheat DME 1/2lb Crystal 135L (crushed) 3oz Chinook hops (at 60 minutes) (bittering hops) 2oz East Kent Goldings (at 15 minutes) (aroma hops) 2oz imported Fuggle hops (while chilling) (amoma hops) 1tsp Irish moss (at 30 minutes) (protein coagulant for clearing) Wyeast 1028 (london ale) or White labs WLP023 Burton Ale (pint starter) Procedure: Steep Crystal at 150 degrees F in one gallon of water for 30 minutes. Top off with remaining water needed (account for boil off as necessary). Bring to boil, reduce heat and slowly add DME. Stir until all DME is completely dissolved. Bring to boil and add first hop additions. Boil for 60 minutes and include remaining hops and Irish moss additions as listed above. OG: 1.060 - 1.065, FG: 1.012 Ferment at 65-69 deg F. Primary 7 days, secondary 10 days. Do a full wort boil if you can. Adjust hops additions if a full wort boil is not possible to ensure proper hop utilization. The SSoS recipe lends itself to easy conversion to extract with specialty grains. Use light DME and half a pound of wheat DME to equal the target O.G. and steep the dark crystal malt. You may wish to increase the bittering hop amounts if you do a partial wort boil. |
