How many times have you looked at your opaque white fermentation bucket and wondered what was going on in there? Is my wort fermenting? What's it look like? How are things going? Lots - right? Well, here's how you can find out without cracking the lid and risking contaminating the wort you worked oh so hard to get into the sanitized fermenter.

Take a sample of your wort right after you pitch your yeast and before you put the lid on the fermenter. You can then put the sample in a glass jar and watch the sample and that will tell you what's going on with your wort. I can't believe someone hasn't thought of this before.

It takes you back to the days of b.d. and Coly Moore, doesn't it. Sam, it's not that you're wrong, it's that this ferment a sample of the wort notion was taken to extremes here a couple of years back.

How small of a sample should I use? mason jar? HEY, I have some old little kings bottles, will they work? Do they make miniature fermentation locks? Where can I get one of those?

Actually, I ferment in glass carboys but I could paint them black to keep the beer from skunking under the harsh lights under my stairs and watch the fermentation in another clear glass bottle.

HMMM, but I like skunk beer.

I recall the original poster used 2-gallon batches, so figure a cup was used as the sample size. Therefore, if you maintain a 32:1 ratio, you should be OK.

Ken, it's not worth distinguishing some of the things that went on around here, although it was occasionally a hoot. What put a halt to the nonsense was requiring anyone to register as a user and create a profile before they could post messages to the board. The tone and civility have improved considerably since then and there has been a lot less trolling.

Coly Moore:

Had a heart attack and died in her sleep.
Had her computer fried during a thunderstorm.
Fell off El Capitan while BASE jumping.
Got caught brewing by her children and is now back on her meds.
Got caught brewing by the janitor and subsequently discovered he gets real horny when he's drunk.
Was really a fifteen year old geek who just needed some quality time.

Anybody know what really happened to Coly?

Imagine that you can bring a testtube with your fermenting precious to work. If it stops or slow down at any time you have a good chance to head back home at maximum speed for beer CPR.

Jeremy, relax, don't worry, have a homebrew (RDWHAHB). It's inevitable that any group of people have their own history and little jokes that have developed over the years. It would be the same if you joined a local homebrew club (which I recommend, by the way). We're basically friendly folks here and we're happy to help, but sometimes we enjoy a laugh and reflecting on some of the events and people who have come and gone. Stick around for a while and you'll become part of history, too.

OK. Here's the real story. I was brewing with my neighbor and it was his idea. I stole it from him. I'm pretty sure he thought of it himself and didn't pick it up from any web message board because he just moved here not too long ago from Uzbekistan. Interestingly, he had brewed some beer before in Uzbekistan, but said he had some problems getting supplies after his initial batch, which had been left behind by an English teacher, ran out. So it had been some time since he had brewed.

1. I'd beg to differ that the reactions occurring in a test tube will mirror those in a 5-gallon bucket (perhaps Frederik can fashion a micro-bubbler and run a myriad of experiments).

2. Take the frickin' lid off the bucket for a second and have a look. Many people open ferment and make great beer...

Whatever became of the guy who had downloaded the archives before the great board crash, and was going to sell CDs of them? Heck, reliving the days when Man Brewer used to bait Coly Moore would almost be worth shelling out $10-$20 bucks or so.

I feel like kind of a jerk because of what I wrote on another thread.

Anyways, I guess the regulars are just a hell of a lot quicker at recognizeing a troll than I am.

But...that Uzbekistan thread from a couple of years ago was pretty frick'en funny. You gotta give Sam that.

Pokesmot Bithawong is not an Aborigine....he is a Thai man that runs an export business in Phuket. He is also the leading HB expert in Thailand, and has won national awards there for his Pepper Rice Stout. I met him on a business trip to Thailand back in 1998.

Jim, I hardly think it's appropriate to cast aspersions on Mr. Bithawong. Apparently he's a successful businessman and homebrewer, and posts like yours can do nothing but harm the man's reputation and business.
