I said i wasnt gonna rush this golden ale but damn i finished off the creame ale keg last friday and am really missing sum homebrew. I brewed this beer on the 15th of this month and transferred it to secondary this past monday. So should i rack to keg and carb and then drink tommorow for the games? :)

1.008 is definitely done, but wait if you can. The flavors still have a little time to mellow. Commercial beer is often the only way to leave the homebrew alone until it's really ready.

Although 1.008 is prob done... the best way to tell is, 1.008 is done when it reads 1.008 again next week..;>
figuring alch can be done on your hydro..
What did your gravity start at before fermenting?

well it was a lil off but my OG was 1.030, but remember i toped off the wort. I thought there was an equation to finding the ALC % ?

Ohh yea.. the 30.. didnt we figure you measured that wrong, and it was really prob like 50 or something?
You dont have to worry about an equasion though.. just look at the side of your hydro at the %alch scale...
1.050 is at just about 6.5% if you look at the hydro, while 1.008 is across from about 1%...
subtract em n get a 5.5% beer :)
If it was truely a 1.030, then thats at 4%, so minus the 1%(1.008) and youd have 3% beer...

That make sense? :)

The formula for calculating the alcohol percentage by volume is (O.G. - F.G.) * 131.

Well i racked to the keg yesterday (late afternoon) i turned on 20 psi and shook abunch of differnt times and then shook it once today. Whats the normal way to force carb a keg? what psi? how long? etc.... I would like to keep this beer as clear as possible and im not sure if i just ruined having it clear for tommorow.... :)

Also, should i keep the psi at 20 until tommorow and then bump it down to 5-7 in the morning? evening? afternoon? Thanks.....

you are asking THIS forum what is normal?!? Grin. I think normal carbonation is to set your target PSI at a given temp (promash has great calculations for this on force carbing) for some length of time. Personally, I carb based on what my draft hose line length/ID is, and that is tuned to serve at about 8-10 psi.

So, I typically force carb/cool for 2 days MINIMUM at 20 psi and then drop back down to serving pressure. I think I can force carb it faster than it will actually cool down to serving temp...shrug.

And yes, you can easily just "burp" the keg after dropping the CO2 down to serving pressure and serve almost immediately (you might get slightly more foaming, but typically you aren't fully carbed any way if you are rushing it).

Regards,

-Jeff

yea.... you can carb it many different ways...
If say you carbed it at serving psi, youd set it to like 10 psi, then sit n wait prob a week for it to be fully carbed...
Or you can hit it with 40 psi, and itll be done in 2 days...
Or any combo inbetween....
Personally, i first learned it the 40 psi way, and ive always done it that way since...

Works for me :)
