I will boil down the basic Dusseldorf-style alt recipe debate for 5 gals into two recipes, you chose: 8 lbs. munich dark 0.5 lbs. aromatic (optional) 3-4 oz Salt WY1007 4 lbs. munich light 4 lbs. pils 0.5-1 lb. aromatic, crystal, etc. 1-2 oz. debittered black same hops WY1338 And numerous variations between the two above. That said, ignore my advice. From 1996-1999. I brewed killer alts. One batch won a 1st in the NHC regionals. Then DWC quit supplying the homebrew market, and my favorite munich malt supplier was gone. Recent alt attempts searching for a suitable munich malt replacement have also (possibly) been confounded by poor WY1338 performance, which has been collaborated by Denny Conn and other posters. So how's that for a non-answer? |
