Here is my theory. If you add honey or hops at the end of the boil you retain more of its flavor or aroma.... along thoses lines... I am curious if adding a crystal steeped grain at the end of a boil would add unique character? Any comments? |

The reason for adding honey and hops at the end of the boil is to preserve some of the volatile aromatics that are driven off during boiling. This is much less true of the flavors in specialty malts. |
