I have a bo pils that I started a diacytl rest on Monday. I now don't have time to rack it tonight and I am leaving town tomorrow. Won't be back till next Tuesday. Would it be OK to bring it back down to 50* and then rack next week? |

Don't have time to rack it??? Your supposed to make time. If your beer isn't your number one priority, then something is wrong! Seriously, if it were me I'd find the 10 minutes of time to rack it over, but Denny is right, it will be OK if you don't. |

Well I do have the 10 minutes of time to rack it (or 20, it's a split 10 gal batch), but what I don't have is time to clean up the fermentors before I leave. And my priorities are fine. I'm going to an all weekend party and have to meet the beer truck with 12 kegs of microbrew |

Die-ASS-uh-teel (empahsis on the second syllable). My bro in law is a chemist in Houston and kept correcting me until I started pronouncing it like this. LIfe begins at 60...1.060, that is.

So...that would be the correct Texas pronunciation? Die-ASS-uh-teel, Die-Ass-uh-teel, Die-ASS-uh-teel. Got it! Thanks. Ric Brewing in NW Houston |

I say "die-ASS-uh-til". Why didn't the word 'ass' get censored? I think if you combine it with 'hole' it does. |
