Can someone tell me the correct grain percentages and or OG? I'm basing it off the recipe in Clone Brews, but the all grain recipe doesn't add up to the 1.061 OG. Thanks for any help in advance.

Assuming you're going for the lambic version, I'd shoot for something in the range of 1.044 to 1.056 or so, with 30-50% unmalted wheat. You've got a lot of leeway, though.
