I’m finally going to give an old ale a shot this Sat at our club’s brew day. 9 lb. German Pils (or two row or 6 row domestic) 12 oz. 60°L crystal 8 oz. Carapils dextrine malt 8 oz. dark brown sugar 6 oz. torrefied wheat 4 oz. Cane sugar (subs for 4 oz. Golden Syrup) 4 oz. black malt chocolate malt 1 oz. Northern Brewer 8% 90 min 0.5 oz. Fuggle 15 min 0.5 oz. Fuggle 5 min 1 oz. Fuggle dry. Munton’s Premium Gold yeast (3 pkgs) 1.25qts. per pound of grain single step mash – what temp? 69% efficiency any suggestions on fermentation temps? Some of these ingredients may seem an odd size but we’re actually doing 15 gal. Whaddayathink? |

If you have a choice, use the 2 row. Pils would be OK, I wouldn't personally use 6 row for this style. LIfe begins at 60...1.060, that is.
