Anyone have an extract recipe for Pyramid Snow Cap clone. Or McEwan's Scotch Ale? |

BYO had a Pyramid Snowcap clone in the Dec 2004 issue. 3.5 lbs. light dried malt extract (DME) 5.0 lbs. 2 oz. light liquid malt extract (LME) 1.0 lb. crystal malt (80 °L) 0.33 lbs. chocolate malt 1 tsp. Irish moss 6 AAU Willamette hops (60 mins) 5 AAU Willamette hops (30 mins) 1 oz. EKG hops (2 min) Wyeast 1338 1 cup dried malt extract (for priming) Steep crushed grains in 1/2 gallon of water at 155 °F for 45 mins. Combine "grain tea," DME and water to make 2.5 gallons of wort. Boil for 60 mins, adding hops at appropriate times. Add Irish moss and LME for last 15 minutes. (Stir in extract well, to prevent scorching; keep the clock running.) Cool wort, transfer to fermenter and top up to 5 gallons with water. Aerate and pitch yeast. Ferment at 68 °F. Bottle with DME. Chris Colby Bastrop, TX |
