I had these cookies @ The 20th Anniversary Great American Beer Festival (GABF) last September in Denver, CO. These cookies are only for the true fanatical hop lovers! I made them for my homebrew club's annual Christmas party in December and they were received with wide eyes & bitter beer faces! Try em. Hair of the Dog Beer Cookies: 2 cups flour 2/3 cup light DME 2 tsp baking powder 2 tsp sea salt 3 tsp finely chopped whole hops 8 ozs unsalted butter 1 1/3 cups sugar 3 eggs 2 ozs British crystal malt (crushed) Directions: Whip butter in a mixer @ high speed until light in color, add sugar & cream together. Add eggs one at a time, making sure that they are well incorporated. Mix dry ingredients together and fold into butter/egg mixture. Pipe cookies onto parchment paper using a pastry bag with a medium straight tip. Sprinkle crushed crystal malt over cookies before baking. Bake @ 350F degrees for @ 15 minutes. Yield 50 cookies. Bryin, I used organic German Spalter Select (5%aa). Any low alpha non-seeded aroma hop of your choosing would be fine though. CHEERS---Beertracker |
