Its slow on the board these days so I'll throw this one out for comment. I know its not a traditional yeast choice. 10 lbs german pils 2 lbs unmalted wheat 8 lbs malted wheat 1/2 lb acidulated malt wyeast 3068 fermented low 60's 3/4 oz magnum for about 18-20 ibu's 1/2 oz grains of paradise 1/2 oz cardamon seeds 1 oz sweet orange peel I wanted bitter orange peel but I they didn't have any when I was at the lhbs on Friday. Should I skip the sweet peel? |

It's an interesting hybrid of hefeweizen and witbier. I might find the cardamom excessive (in my opinion a very little goes a long way), but that's a matter of taste. |

That gives me gag reflex just reading about that much cardamom.. I once put about that much in a beer and it was beyond extreme. I've since read several places you only need a few (meaning <10) of the tiny little pods. Just an FYI, maybe your tastes are different than mine. |

To be honest I have not used these type of spices before. I did cut the amounts in half and added them at about 5 minutes before chilling. The wort did not taste over the top "spicy" but you have me worried now but it is too late to do anything but ride it out. |
