Yeast Starter

Smack the yeast package (wyeast) and allow it to swell (keep it at room temperature-as directed on package). It will take 1 to 5 days, depending upon the age of the package.

After the package has swelled, boil 1/3 cup of Dry Malt Extract (DME) with 2 cups of water for 15 minutes, cool to 75 degrees and pour the yeast package (make sure the package is cleaned-sanitize it!) into a cleaned and sanitized 22 oz. bottle (burn the bottle with a lighter to clean it). Pitch the SWOLLEN yeast pack and shake for several minutes.  Put a clean and sanitized airlock to the bottle, and allow it to ferment-out (high kraeusen - until it bubbles into the airlock which may take 24 hours.
