I've been brewing for 20+ years and judging for most of that time. I do agree that one can often pick out characteristics of homebrew versus good commercial quality brewing, but there are a number of things we need to do to improve our beers. Plastic, the right plastic, is fine if treated well. Using the proper water, really good yeast management, full 6+gallon boils, rapid chilling, good aeration, fully attenuating the beer, proper sanitation, and taking care of oxidation all will improve our beers significantly. Dry yeast, at least modern dry yeasts make just as good beer as liquid yeasts if one handles both properly. There's no one magic bullet for everyone, but each of us may need to make changes in one or more of these elements of brewing. David Houseman Return to table of contents
