This recipe was served at all three sessions of Brewtopia 2008.  The ingredients listed are for a 12 gallon post-boil batch.

 

Grain Bill:

16 lb. Pils malt

6 lb. Wheat

4 oz. Melanoidin malt

6 oz. Aromatic Malt

 

Hop Schedule:

.25 oz  Sterling 6% A.A. 90 min.

2 oz. Sterling 6% A.A. 60 min.

1 oz. Mt Hood 4.7% A.A. 1 min.

1 oz. Mt Hood 4.7%  A.A. 0 min.

(about 29 IBU)

 

Mash grains at 148 for 90 minutes.

 

Efficiency set at 81%

Pre Boil gravity at 13.5 gallons 1.051

Post Boil gravity at 12 gallons 1.059

Final Gravity 1.007

 

Ferment with Wyeast 3711 (French Saison) yeast between 73-76 degrees.

IBU: 29

ABV: 6.9%
