This recipe was served at all three sessions of Brewtopia 2008.  The ingredients listed are for a 12 gallon post-boil batch.

 

Grain Bill:

21 lb. Marris Otter

2 lb. Wheat

1 lb. Crystal 40

1 lb. Chocolate

1 lb. Black patent

1 lb Munich

1 lb. Special Roast

½ lb. Special B

 

Hop Schedule:

1 oz. US Magnum 10% A.A. 60 min.

½ oz. Millenium 16% A.A. 60 min.

1 oz. Centennial 9.5% A.A. 15 min.

1 oz. Amarillo 8.9% A.A. 15 min.

1 oz. Centennial 9.5% A.A. 0 min.

1 oz. Amarillo 8.9% A.A. 0 min.

(About 50-55 IBU)

 

Mash grains at 148 degrees for 75 minutes.

 

Efficiency set at 80%.

Pre Boil Gravity at 13.5 gallons=1.063

Post Boil Gravity at 12 gallons=1.070

Final Gravity 1.018

 

Ferment with Wyeast 1056 (American Ale) at 70 degrees.

 

SRM: 35

IBU: 50-55

ABV: 6.9%
