I am thinking the humidity is way too high it hovers around 94-99 most of the time. WOuld a dehumidifyer work for this. I have been scrubbing it off of the cheese, also we are getting some cheese ripening matts for the cheeses to sit on as we are using a fiberglass shelf. Our health dept does not allow wood surfaces. ps , the cheese taste great , but looks pretty bad, plus the labor of cleaning all of it is way too much.
