[Cheese] Mold (again)

Hey Jack,
I have a Stilton and a Gorgonzola aging as we speak as you know............
my question is, should I scrape off the mold that is now growing on my
unwaxed cheese's? I have a Mancheo and Romano that are getting "furry". I
have been able to get all of the mold on the Romano due to the extended
brine bath it was in, but the Manchego is out of control. I can't get it
all off. Just tonight, I have smeared them with olive oil to keep them from
drying and also in the hopes it may retard unwanted mold growth.
By the way, Stilton doing beautifully, the Gorgonzola, although not molding
on the outside is aging nicely on the inside. (I know this because I poked
more holes in it and the bleu cheese smell was very evident)

1 more month until I start tasting a Farmhouse
Cheddar.......................can't wait.

Brian
