Yep.  It's right on top of the stalled Gorgonzola.
Funny thing is, the Stilton which is taking off I thought I screwed up on.  I totally forgot to add the mold until after I added the rennet.  So I added the mold after the rennet and slowly stirred up and down.  Worked like a charm.  I call this mistake the "late mold induction" stage on my recipe just in case my wife reads it.
Don't want her thinkin' I don't know what I'm doing..........................................
