[Cheese] brown mold on blue cheese

The red/brown smear is normal.  One writer I came across simply said that it was a matter of personal taste of whether or not one ate the rind.  My personal taste is to remove the rind and consume the paste.  As it continues to mature, most people would shy away from eating the rind, as it would likely impart an off-taste.
   
  As far as serving it to guests, if they are velveeta and sliced cheese people then by all means remove the rind because these are the type of people that would remove the rind from an camembret.  If they are at least sophisticated enough to purchase their cheese from a real cheese monger or from a Whole Foods Market, they know that the rind is a sign of an artisan cheese and they will appreciate seeing it, even if they don't eat it.  (Who me? A food snob? Never!)
   
  Blue cheese is good food.
