How do I power the rig?

My laundry room has both gas and electric provisions. Since we use a gas dryer, I have made an extension cable that plugs in behind the dryer to the 240 VAC dryer outlet. When in not in use, I coil it up and store it behind the dryer. To brew, I just run it out the door to the brewing rig. This sure beats trips to the hardware store waiting for propane refills.

Why doesn't it scorch the wort?

The element is in the wort and this keeps the temperature at boiling . I was skeptical at first, but I have brewed some light Pilsners and wheat beers with absolutely no scorching from the heating elements.
