A.J.
According to the MSDS, 5.2 is "A blend of food grade buffering 
phosphates." It does not elaborate. What is you opinion on it's effects 
on beer as far as mash extraction, boiling, fermentation and ultimate 
flavor?

Subject: Brother Levonian Saison

Esteemed HBD'ers:

The AHA National Convention in Oakland will feature not one, but two 
incredible commemorative beers: "Brother Levonian Saison" and "Sippin' by 
the Dock of the Bay IPA."  The IPA is being brewed by Harold Gulbransen and 
Pat McIllhinney of Alpine Beer Company.  Brother Levonian
was brewed by Mighty Mike and Tomme Arthur of Lost Abbey with a recipe 
formulated by me and Dave Levonian.
