---------------------------------------------------------------------- Date: Fri, 13 Dec 2013 07:21:25 -0500 From: Littleboybrew <littleboybrew at verizon.net> Subject: Berliner Weisse Yeast In HBD 6068, Thomas asks about performance of Berliner Weisse yeast. Last year I made two batches using the Wyeast version. The first was a straight Berliner Weisse, the second a brown wort pitched onto the dregs of the Berliner Weisse yeast. I have never tasted an authentic Berliner Weisse so I cannot attest to its exact performance, but my beer was tart, not overly sour. They were both enjoyable beers, but my impression was that my Berliner Weisse was not as sour as a classic style. Thomas, if you know or google the Mad Fermentationist, I recall he blogged about his experience and impression of Berliner Weisse yeast. Kevin Return to table of contents
