Leavitt" <leavitdg at plattsburgh.edu> Subject: Black IPA If I were to try to make a Black IPA, I believe that I would try to minimize the roasted / stout sort of flavors. Perhaps using Caraffa malt (dehusked) would fit the bill? It is used for some German Dark Lagers. I would keep the grain bill quite simple, just 2 row as a base and 1/2 to 1 lb of Caraffa. I have been beer hunting there 2 years ago but are there any new "must go" places that have opened in the last couple of years? Also, I want to bring back one 12 pack of beer to share with UNYHA my local homebrew club. The club is large enough that I need at least 12 bottles of the same beer so that everyone at the meeting can get a taste, so I can only reasonable bring back one brand in my checked luggage. It was a collaboration between Brew Dog and Stone (It cost $6 for 1 12 oz.). It was quite interesting. I've had a few Belgian IPAs, but this was the first dark one. It was more of a chocolate malt flavor though. I think you might get some coffee like flavors from the roasted barley, which in my opinion doesn't fit in an IPA. Try a little chocolate malt, but it doesn't have to be black. Also try some really dark crystal, 120 maybe. I've been making an India Porter for a while which comes out nice with chocolate and black malt, but if you want a Dark IPA, you need to stay in the style a little bit. Return to table of contents
